Mamma's Dip Recipe--Oh Yeah, There Was a Party
So on Friday night a bunch of the DC Metro Moms got together at Sarah's for a wine tasting (or beer drinking if you're me--thanks for the Stella Nancy).
I'd love to tell you how refined we all were--how we just sipped wine, looked fabulous and compared designer handbags. But if that had been the case, you definitely wouldn't have been at a DC Metro Moms party and you definitely wouldn't have had as much fun as we did. Of course, everyone there WAS fabulous--I'm especially talking to you girl--except me of course who opted for a nap and a ponytail instead of a "do" but that's what's so terrific about this group of women, I knew they'd show me some love just the same.
For those of you who weren't there, fear not. Just drink a lot of wine, go try to sneak up to your old boyfriend's house in a minivan filled with crazy moms and then scarf down some crack dip (recipe below).
It will be just like you were there.
Well, except for the fact that you didn't get to experience these shoes in real life. (And, um, Mr. Vibram I'd love a pair to try in size 9 1/2 please--especially after this broken ankle)
I can't take credit for the creation of this recipe--I got it from a friend who made it for a tailgate--but I did make it and bring it with me Friday night and was asked repeatedly for the deets.
So here it is...and yes I'm calling it mine.
Mamma's Black Bean Feta Dip
2 cans black beans (drained and rinsed)
2 cans white shoepeg corn
2 8oz. packages of feta cheese crumbled
2 bunches of green onions chopped
1/2 cup extra light olive oil (not extra virgin it will taste wrong)
1/2 cup apple cider vinegar
1/2 cup sugar
Garlic powder to taste
1. Pour first four ingredients into a big bowl and mix.
2. Mix last four ingredients in a small bowl and whisk together.
3. Pour dressing (step 2) over the top of mix (step 1).
4. Serve with Fritos Scoops (they're the strongest and provide the perfect dip/chip ratio)
This recipe makes quite a bit. You can easily halve it for a smaller group. I know there was plenty left over on Friday night (much to Mr. GoonSquad's delight). Also, it's best if you make it a bit ahead and refrigerate, but it's not necessary. People will beg you for the recipe either way. Feel free to pass it along.
